Broccoli, Cauliflower & Carrots
Ingredients
1 large head of broccoli chopped into medium size pieces
1 head of cauliflower-chopped medium size
3-4 carrots depending on size
1-2 zucchinis and/or peppers (optional)
1 small red onion chopped
6 cloves of garlic
Small handful of fresh parsley
Sprinkle of dry rosemary, sage to taste
Drizzle of olive oil
1/2 -1 cup of water
Preparation
In a large skillet saute in a little water add the chopped red and sweet onion and garlic, until onions are almost soft.
Next add the carrots and cook for about 8 minutes on high.
Add water as needed to lightly steam the veggies.
Add the broccoli, cauliflower and rest of ingredients.
Cook until the broccoli turns a bright green.
Turn burner off and let the veggies slightly cool and then drizzle with a little olive oil to make the veggies look shiny.
